1 inch piece ginger , peeled , washed and sliced
1/4 cup water
1 bunch coriander leaves , washed and chopped

4 tablespoons rice bran oil , divided

1 cup of frozen green peas , defrosted and washed
1 cup French beans , washed , ends trimmed and chopped in 1 inch size pieces
2 medium sized tomatoes , washed and diced
1 small cauliflower , washed and chopped to get the individual florets
2 tablespoons coriander leaves , washed and chopped , to garnish

3.Add the diced carrot, diced potatoes, defrosted green peas, and chopped French beans to the pan. Sauté for 5-6 minutes until the vegetables are slightly browned.
4.In a separate pan, heat the remaining 2 tablespoons of rice bran oil over medium heat. Add 2 teaspoons of cumin seeds and fry for 1-2 minutes until fragrant.
5.Add the chopped cauliflower and diced tomatoes to the pan with the cumin seeds and sauté for 3-4 minutes.
6.Add the ginger-garlic-cumin paste to the pan with the cauliflower and tomatoes. Sauté for an additional 2-3 minutes until the paste is fragrant and well incorporated.
7.Add the cauliflower and tomato mixture to the pan with the other vegetables. Sauté for 2-3 minutes until all the vegetables are well combined and the spices are evenly distributed.
8.Add water to the pan if the mixture is too dry and cook for an additional 2-3 minutes until the vegetables are tender. Remove the pan from heat and garnish with chopped coriander leaves.
