Ingredients

2 cups chickpeas , soaked overnight in plenty of water
4 small onions , peeled , washed and finely chopped
5 -6 garlic cloves , peeled , washed and finely chopped
2 inches fresh ginger , peeled , washed and finely chopped
1 -2 medium green chili , washed , ends trimmed and slit
1 tablespoon cumin seed
4 tablespoons pure wesson canola oil
1 1/2 teaspoons turmeric powder
3 teaspoons coriander powder
2 bay leaves
1/2 teaspoon baking powder
1/4 cup water , to cook tomatoes
2 medium tomatoes , washed , peeled and finely chopped
3/4 teaspoon red chili powder
3 teaspoons salt
1 teaspoon garam masala powder
1/2 cup tamarind juice
Channa Masala or chickpea curry is a popular Indian dish that is known for its comforting and aromatic taste. It is a staple food in most households and is usually served with steamed rice, roti or naan. The dish is made with boiled chickpeas that are cooked in a spicy and tangy tomato-based gravy. It is a rich source of protein, dietary fiber and iron. Instructions

1.Pressure cook the soaked chickpeas with 8 cups of water until soft and tender. Drain and keep aside.
2.Heat oil in a heavy bottomed pan or kadai. Add cumin seeds to it and let them splutter.
3.Add chopped onion and fry until soft and slightly brown.
4.Add ginger, garlic and green chilli to the onion and fry well until the raw smell goes away.
5.Mix coriander powder and turmeric powder in half cup of water and add it to the pan. Mix well and let it cook until oil separates from the masala.
6.Add chopped tomatoes and cook till they are soft and well blended with the masala.
7.Add the boiled chickpeas and mix well with the masala. Add salt, red chilli powder, garam masala powder and mix again.
8.Cook on a medium flame for 10-12 minutes till the entire masala gets well absorbed by the chickpeas and it becomes dry.
9.Add tamarind paste and baking powder and mix well.
10.Add chopped coriander leaves and mix well. Serve hot with rice, roti or naan.
