Ingredients

1 3/4 cups black-eyed peas , cleaned , washed , drained and soaked overnight in plenty of water
1 medium green chili , washed , ends trimmed , slit and finely chopped
7 garlic cloves , peeled , washed and finely chopped
1/4 inch fresh ginger , peeled , washed , sliced and finely chopped
4 roma tomatoes , washed , peeled and chopped
1 teaspoon salt
1 teaspoon turmeric powder
1/4 teaspoon red chili powder
2 medium purple onions
5 1/4 cups water , divided ( this does not include water for soaking the peas )
2 tablespoons olive oil
Subru Uncle's Black-Eyed Peas (Chauli) is a traditional Indian dish that is commonly consumed in many households. Instructions

1.In a pressure cooker, add soaked and drained black-eyed peas, chopped green chili, chopped garlic, chopped ginger, chopped tomatoes, salt, turmeric powder, red chili powder, purple onions, and olive oil.
2.Add 4 cups of water and mix well.
3.Close the pressure cooker with a lid and cook on high heat until the first whistle.
4.Reduce the heat and let it cook for 10-12 minutes.
5.Turn off the heat and let the pressure release on its own.
6.Once the pressure is released, open the pressure cooker and add 1 1/4 cup of water.
7.Mix well and adjust the seasoning if required.
8.Cook on high heat until it comes to a boil, then reduce the heat and let it simmer for 10-12 minutes.
9.Turn off the heat and let it sit for 5-10 minutes before serving.
