Ingredients

1 cup chopped onion
1 tablespoon olive oil
1 can red chili sauce , divided
1/2 cup pine nuts
1/4 cup golden raisin
1/4 teaspoon cinnamon
1/4 teaspoon ground allspice
1 tablespoon finely chopped canned chipotle chile in adobo , plus
2 teaspoons adobo sauce ( see Notes )
1 tablespoon tomato paste
1 tablespoon firmly packed light brown sugar
1 tablespoon white wine vinegar
3 3/4 cups shredded chicken meat ( from one 2 1/2- to 3-lb . rotisserie chicken )
12 corn tortillas
3 cups coarsely shredded monterey jack cheese
2 radishes , halved and thinly sliced
3 tablespoons fresh lime juice
1/4 cup extra virgin olive oil
5 -6 cups very thinly sliced green cabbage ( see Notes )
1/4 cup coarsely chopped fresh cilantro
salt & freshly ground black pepper
Sublime Stacked Chicken Enchiladas are the perfect comfort food for a cold or rainy day. Instructions

1.Preheat oven to 350°F.
2.Heat oil in a medium saucepan over medium heat. Add onion and cook, stirring, until softened, 3 to 5 minutes.
3.Add 1/2 cup chili sauce, pine nuts, raisins, cinnamon and allspice. Cook, stirring occasionally, until most of the liquid has evaporated, about 5 minutes.
4.Stir in chipotle to taste, tomato paste, brown sugar, vinegar and 1/2 cup water; bring to a simmer and cook for about 5 minutes.
5.Stir in chicken and remove from the heat.
6.Spread 1/2 cup remaining chili sauce in the bottom of a 9-by-13-inch baking dish.
7.Dip 4 tortillas in the remaining sauce to coat. Layer the tortillas in the pan and top with 1/3 of the chicken mixture and 1/3 of the cheese. Repeat the layers twice, starting with tortillas and ending with cheese.
8.Bake the casserole until it is bubbling, 15 to 20 minutes.
9.Toss radishes with lime juice in a large bowl; drizzle in oil and sprinkle with salt and pepper. Add cabbage and cilantro; toss to combine. Serve each portion of enchiladas with a generous pile of the slaw.
