Ingredients

1 cup whole milk , at room temperature
6 large egg whites , at room temperature
1 tablespoon orange flower water , at room temperature
1/4 teaspoon vanilla extract
2 1/4 cups cake flour , plus
1 -2 tablespoon flour , for the pans
1 3/4 cups granulated sugar
4 teaspoons baking powder
1 teaspoon table salt
1 1/2 teaspoons freshly ground cardamom
1/4 teaspoon lightly crushed saffron thread
12 tablespoons unsalted butter , softened
1/3 cup fresh green pistachios
light green and gold luster dust ( optional )

1 1/2 cups butter , room temperature and cut into small cubes
1 cup alphonso mango puree
Kulfi is a popular frozen dessert in India. It is similar to ice cream in texture, but typically made with sweetened condensed milk and flavored with saffron, pistachios, and cardamom. Mango Kulfi is a classic summer treat in India. We have turned this classic dessert into a stunning cake that is perfect for any celebration. The combination of sweet mango and floral aromas makes this cake irresistible.

Instructions

1.For the Cake:
2.Preheat your oven to 350°F (180° C). Grease and flour a 9-inch cake pan.
3.In a medium bowl, whisk the milk, egg whites, orange flower water, and vanilla extract until well combined.
4.In a large bowl, mix together the cake flour, granulated sugar, baking powder, salt, cardamom, and saffron.
5.Add the butter and blend until the mixture has a crumbly texture. Gradually add the milk mixture and beat with an electric mixer until the batter is smooth and fluffy.
6.Pour the batter into the prepared cake pan and sprinkle the top with pistachios.
7.Bake for 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
8.Let the cake cool completely on a wire rack before frosting.
9.For the Frosting:
10.Beat the egg whites and sugar together in a large mixing bowl over a pot of boiling water until smooth and glossy.
11.Remove the bowl from heat and beat the mixture until it reaches room temperature.
12.Gradually add the butter cubes and beat until frosting is smooth and fluffy.
13.Add the mango puree and continue to beat the frosting until it's light and airy.
14.Decorating:
15.Pipe the frosting onto the cooled cake and sprinkle with green and gold luster dust.
16.Place in the refrigerator for 1 hour to set.
