Ingredients

2 -3 tablespoons olive oil ( for frying )
2 tablespoons butter or 2 tablespoons margarine
2 -3 cups seasoned stuffing mix ( depending on how much bread portion you want )
mozzarella cheese ( use as much or as little as you like )
0.5 can pasta sauce with meat ( for pasta )
1/2 eggplant , sliced into chunks
1/4 onion , sliced into chunks
1/2 green pepper , sliced into chunks
fresh mushrooms ( I prefer Shiitake )
salt ( to taste )
Stuffing Vegetable Lasagne is a delicious twist on classic lasagna that uses seasoned stuffing mix instead of traditional noodles. Instructions

1.Preheat oven to 350 degrees F.
2.In a heavy-bottomed skillet, heat olive oil and butter over medium-high heat until melted and shimmering.
3.Add seasoned stuffing mix to the skillet, stir to coat with butter and oil, and cook for 3 to 4 minutes, or until crispy.
4.Spread half of the pasta sauce in the bottom of a 9x13 inch baking dish.
5.Layer the sliced eggplant, onions, green pepper, and fresh mushrooms over the pasta sauce.
6.Spread the remaining pasta sauce over the vegetables.
7.Sprinkle the mozzarella cheese over the top of the pasta sauce.
8.Sprinkle the crispy stuffing mix over the cheese.
9.Cover the baking dish with foil and bake for 30 to 35 minutes, or until the cheese is melted and bubbly.
