Ingredients

8 large leaves swiss chard
1 cup cooked white rice ( I like to use brown rice )
2 carrots , coarsely grated ( about 1/2 cup )
1/2 fresh mint leaves , chopped
1/4 cup cucumber , seeded , peeled and coarsely grated
2 green onions , chopped
3 tablespoons low sodium soy sauce
2 teaspoons fresh ginger , grated
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/3 cup rice vinegar
3 tablespoons sugar
2 teaspoons toasted sesame oil
1 teaspoon red pepper flakes
Stuffed Swiss chard is a classic Mediterranean dish that's hearty, comforting, and healthy. Swiss chard is the perfect vegetable for this dish, as its large leaves can be filled with a variety of flavorful ingredients. The filling in this recipe is a combination of rice, grated carrots, cucumber, green onions, and fresh mint, all tossed in a delicious sesame and soy dressing. Baked to perfection, these stuffed Swiss chard leaves are a satisfying and healthy main dish option that's easy to prepare.

Instructions

1.Preheat the oven to 350°F.
2.Fill a large pot with water and bring to a boil.
3.Remove the tough stems from each Swiss chard leaf by cutting along either side of the stem.
4.Blanch the chard leaves in the boiling water for 15-30 seconds, then immediately transfer to a bowl of ice water.
5.Drain the chard leaves and dry them with paper towels.
6.In a large bowl, combine the cooked rice, grated carrots, chopped mint, grated cucumber, and chopped green onions.
7.In a separate bowl, whisk together the soy sauce, grated ginger, honey, salt, pepper, rice vinegar, sugar, toasted sesame oil, and red pepper flakes until well combined.
8.Pour the dressing over the rice mixture and stir until well combined.
9.Spoon the rice mixture onto each chard leaf, then roll up tightly.
10.Place the rolled chard leaves seam-side down in a baking dish.
11.Bake for 25-30 minutes, or until heated through.
