1 small red cabbage
2 tablespoons margarine
2 onions , finely chopped
1 cup dry breadcrumbs
1/2 lb ground pork
1/2 lb ground beef
1 egg
salt and pepper
3 tablespoons cooking fat or 3 tablespoons vegetable shortening
1/4 lb mushroom , if desired
3 -4 tablespoons all-purpose flour
2 cups meat stock
1/3 cup half-and-half
Stuffed Red Cabbage Leaves, or rotkohlrouladen, is a traditional German dish that has been enjoyed for generations. The dish is often served at holiday feasts or family gatherings, and is loved for its hearty, comforting flavors. The cabbage leaves are boiled until tender, then filled with a mixture of ground beef, ground pork, onions, and breadcrumbs seasoned with salt and pepper. The rolls are then baked in a creamy sauce made with meat stock and half-and-half until they are hot and bubbly. Instructions

1.Boil the red cabbage head for 10 minutes in a large pot of salted, boiling water. When finished, remove and let cool.
2.In a large frying pan, melt the margarine and sauté the onions until they are golden brown. Add in the breadcrumbs, ground pork, ground beef, and egg, and continue to cook until the meat is browned and cooked all the way through. Season with salt and pepper to taste.
3.Preheat the oven to 375°F (190°C).
4.Peel off the cabbage leaves one by one and flatten them out on a cutting board. Fill each leaf with about 2 tablespoons of the meat mixture, and roll them up tightly, tucking in the sides.
5.Grease a baking dish with cooking fat or vegetable shortening, and place the rolled-up cabbage leaves in it with the seam side down. If using mushrooms, slice them and sprinkle on top of the cabbage rolls.
6.In a small saucepan, melt cooking fat or vegetable shortening and mix in the flour. Cook the mixture on medium-low heat, stirring constantly, until it browns slightly and resembles a roux. Add the meat stock and stir until it thickens. Stir in the half-and-half and pour over the cabbage rolls in the baking dish.
7.Bake for 1 hour, or until the cabbage rolls are tender and the sauce is thick and bubbly. Serve hot with your choice of sides.
