Ingredients

2 pork tenderloin
1/2 lb chorizo sausage
1/2 lb raw prawns , shelled & deveined
1 shallot , minced
1 head roasted garlic
1/2 cup minced red bell pepper

1 teaspoon ground cumin or 1 teaspoon chili powder
2 chopped jalapeno peppers , seeds removed
1 1/2 teaspoons salt
1 teaspoon ground pepper
6 italian red pear tomatoes , peeled
1 cup mexican salsa ( jarred or fresh )
1/2 cup chopped fresh cilantro
1/2 cup olive oil
1 shallot , finely diced
1 medium onion , diced
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon pepper
1/2 cup red wine

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Butterfly each pork tenderloin by cutting it in half lengthwise but not all the way through, so it will lay flat.
3.Blend chorizo, prawns, shallot, roasted garlic, red bell pepper, cilantro, cumin or chili powder, jalapeno peppers, salt, and pepper in a food processor until fully combined.
4.Spread the mixture on top of the opened pork tenderloins, roll and tie them securely with twine.
5.Heat the olive oil in a large skillet and quickly sear the pork tenderloins on all sides until browned.
6.Add chopped shallot, onion, chili powder, salt, and pepper, then stir in the red wine and mexican salsa and bring it to a boil.
7.Remove from heat and pour the sauce over the stuffed pork tenderloins.
8.Bake for about 40-50 minutes or until the pork is fully cooked.
