Instructions

1.Preheat oven to 375 degrees F.
2.Butterfly the pork tenderloin, slicing it lengthwise down the middle but not all the way through. Open it up and lay it flat.
3.In a food processor, combine garlic, onion, cilantro, lime juice, diced jalapeno, and corn oil. Pulse until it becomes a paste.
4.Spread the pesto mixture evenly over the pork tenderloin. Sprinkle the shredded cheese on top.
5.Roll the pork tenderloin (it should look like a cylinder).
6.Place the stuffed pork tenderloin into an oven-safe dish. Cover with foil and bake for 25 to 30 minutes or until the internal temperature reaches 145 degrees F.
7.Serve the stuffed pork tenderloin with green chile picante sauce on top.
