250 g pork mince
50 g red onions or 1/2 red onion , finely chopped
1 garlic clove
75 g prunes , finely chopped
75 g dried apricots , finely chopped
1 tablespoon light soy sauce

600 g outdoor bred british pork fillets
200 g free-range chicken breasts or 1 large free-range chicken breast
100 g pate ( a smooth pate like Brussels )
100 g mushrooms ( chestnut , very finely chopped )

200 g streaky bacon or 10 slices streaky bacon

Instructions

1.Preheat the oven to 180C/160C fan/gas 4.
2.In a medium bowl, combine the pork mince, red onions, garlic, prunes, dried apricots, light soy sauce, ketchup, breadcrumbs, egg, and parsley. Mix well to combine.
3.Butterfly the pork fillets by slicing them down the middle cutting almost, but not completely, in half.
4.Place the chicken breast between 2 sheets of baking paper and beat with a rolling pin until thin slices. Add the pate, mushrooms, onions, and garlic to a medium bowl and mix well.
5.Divide the pork mixture in half and spoon onto each pork fillet. Top each with the chicken breast and mushroom mixture. Roll up the pork fillets tightly. Wrap each stuffed fillet with bacon slices, tucking the edges under.
6.Place the pork fillets seam side down into a baking dish and bake for 40-50 minutes, or until the pork is cooked through. Let rest for 5 minutes before slicing and serving.
