Ingredients

1 cup vinegar
1 chicken bouillon cube
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
2 lbs pork chops
1 tablespoon Lawry 's Seasoned Salt
1 eggplant ( chopped in cubes )
1 cooked chicken cutlet ( chopped )
1/4 cup shrimp ( raw , no shells , chopped )
1/2 cup prepared stuffing
1/2 cup butter
1/3 cup water
Stuffed Pork Chops are an excellent dinner choice for those who enjoy a hearty meal. The pork chops are seared and then stuffed with a flavorful mixture of eggplant, chicken, shrimp, and stuffing and baked in a savory vinegar sauce. This dish is versatile since the stuffing can be customized with different vegetables and meats depending on the season or personal preferences.

Instructions

1.Preheat the oven to 350°F.
2.In a small saucepan, combine the vinegar, chicken bouillon cube, salt, garlic powder, and black pepper. Bring to a boil, then simmer for 5 minutes.
3.Season both sides of the pork chops with Lawry's seasoned salt. In a skillet, sear the chops until browned on both sides.
4.In a large bowl, stir together the chopped eggplant, chicken, shrimp, prepared stuffing, butter, and water to make a stuffing.
5.Cut a pocket in the side of each pork chop and fill with the stuffing mixture.
6.Place the stuffed chops in a baking dish and pour the vinegar mixture over them.
7.Cover with foil and bake for 45-50 minutes.
8.Remove the foil and continue to bake for an additional 15-20 minutes or until the internal temperature reaches 145°F.
