Ingredients

4 medium onions
1 1/2 cups cooked basmati rice
1/2 cup cooked chickpeas
3 tablespoons dried currants

Instructions

1.Cut the top of onions and peel the outer skin carefully.
2.Boil onions in a pot of water for 10 to 15 minutes or until they become slightly tender.
3.Allow onions to cool in cold water, drain and scoop out the insides, leaving a 1/4 inch shell.
4.In a mixing bowl, add 1 1/2 cups of cooked basmati rice, 1/2 cup cooked chickpeas, 3 tablespoons dried currants, 2 tablespoons chopped parsley, 1 tablespoon lemon juice, 1/2 tablespoon cumin, 1/4 teaspoon paprika, 1/4 teaspoon cinnamon, salt and pepper. Mix until well combined.
5.Stuff the onion shells with the mixture.
6.In a baking dish, add 1 cup of vegetable broth, 1 teaspoon of extra virgin olive oil and 1 tablespoon of white wine vinegar. Mix well.
7.Place onions in the dish and cover with foil.
8.Bake in the oven for 25-30 minutes at 375°F.
9.Uncover and bake for additional 10 minutes.
10.Serve hot!
