Stuffed okra is a popular vegetarian dish in many parts of the world, including India and the Middle East. This recipe combines the unique flavor of okra with a blend of spices and mango powder, giving the dish a tangy and slightly sweet taste. The dish is easy to prepare, though hollowing out the okra can be time-consuming. Once fried, the stuffed okra is crispy on the outside and soft on the inside, making it a delicious and satisfying appetizer or side dish. Serve it with chutney or yogurt for a perfect snack or accompaniment to a meal.

Instructions

.In a bowl, mix together mango powder, ground ginger, ground cumin, ground turmeric, chili powder (if using), salt, and vegetable oil to make a spice mix.
.Slice off the top of the okra and hollow out the inside with a small knife or spoon, being careful not to cut through the sides.
.Stuff each okra with the spice mix, pressing it down to fill any gaps.
.In a separate bowl, mix together corn flour and enough water to make a thin batter.
.Heat vegetable oil in a frying pan over medium-high heat.
.Dip each stuffed okra in the batter to coat, then place in the hot oil.
.Fry the okra until golden brown and crispy, about 3-4 minutes per side.
.Use a slotted spoon to remove the okra from the oil and place on a paper towel-lined plate to drain excess oil.
