Ingredients

1 lb monkfish , tail skinned & trimmed
6 slices prosciutto or 6 slices bacon
4 tablespoons chopped mixed herbs ( parsley , chives , basil , sage )
1 teaspoon finely grated lemon rind
2 tablespoons olive oil
salt and pepper

Instructions

1.Preheat the oven to 200 C / Gas mark 6.
2.Mix the chopped herbs, lemon rind, salt and pepper in a bowl.
3.Drizzle the monkfish tail with olive oil and sprinkle with the herb mixture. Lay the bacon or prosciutto slices out on a board or work surface, overlapping slightly. Roll the monkfish tail up in the slices of bacon or prosciutto.
4.Place on a baking tray and bake for 25 minutes, or until the fish is cooked through, basting halfway through with any pan juices. Let the fish rest for 5 minutes before slicing and serving.
