Ingredients

1 kg bitter melon
1 tablespoon red chili powder
1 teaspoon turmeric powder
1/2 teaspoon coriander seed , roughly ground
1 teaspoon fennel seed
1/2 teaspoon nigella seeds
1 tablespoon ginger-garlic paste
1/2 cup thick tamarind juice
salt
4 large onions , chopped fine
string
oil ( for frying )

Instructions

1.Cut the bitter melon lengthwise in half and scoop out the seeds with a spoon.
2.Sprinkle salt all over the bitter melon and let it sit for 15-20 minutes.
3.In a mixing bowl, add red chili powder, turmeric powder, coriander seed, fennel seed, nigella seeds, ginger-garlic paste, and tamarind juice. Mix well.
4.Stuff the spice mix into the hollowed-out bitter melon and secure both halves with a string.
5.Heat oil in a frying pan and shallow fry the stuffed bitter melon on medium heat until cooked through. Serve hot!
