Ingredients

6 thin and long medium-size eggplants
salt
sunflower oil , for frying
2 onions , chopped
14 ounces ground beef or 14 ounces lamb
1 tablespoon tomato paste
2 large tomatoes
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
black pepper
1/3 cup chopped flat leaf parsley
1 cup tomato juice
Stuffed Eggplants With Meat (Karniyarik) is a traditional Turkish dish that consists of eggplants that are stuffed with a mixture of ground beef or lamb, onions, tomatoes, parsley, and spices. Instructions

1.Cut off the stems of the eggplants and peel them lengthwise in zebra stripes.
2.Sprinkle the eggplants with salt on both sides and let sit for 30 minutes.
3.After 30 minutes, rinse the eggplants and pat them dry.
4.Heat sunflower oil in a pan and fry the eggplants until they turn golden brown on both sides.
5.Cut each eggplant open lengthwise and scoop out the seeds with a spoon.
6.Preheat the oven to 375°F.
7.In a separate pan, sauté the onions until they are translucent, then add the ground beef/lamb and cook until browned.
8.Add the tomato paste, diced tomatoes, cinnamon, allspice, and black pepper to the meat mixture and cook for another 10 minutes.
9.Remove from heat and stir in chopped parsley.
10.Place the eggplants in a baking dish and fill each eggplant with the meat mixture.
11.Pour tomato juice over the stuffed eggplants and bake in the oven for 30-40 minutes or until the eggplants are tender.
