1 large eggplant , ends trimmed
2 teaspoons sea salt , or as needed
1 cup all-purpose flour
3 eggs , beaten
1 cup dried bread crumbs
vegetable oil for frying , or as needed
2 cups ricotta cheese
1/2 cup grated Romano cheese
1 tablespoon minced garlic
salt and ground black pepper to taste
2 cups prepared pasta sauce
Stuffed Eggplant Parmesan Rolls are a delicious and healthy twist on classic eggplant parmesan. This recipe uses rolled eggplant slices stuffed with a mixture of ricotta cheese, Romano cheese, and garlic, making it vegetarian and a great alternative to meat-based dinners. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Cut the eggplant lengthwise into 1/8-inch thick slices.
3.Sprinkle salt over the eggplant slices and let them sit for about 15 minutes.
4.Rinse with cold water and pat dry with paper towels.
5.Coat each eggplant slice lightly with flour and then dip in the beaten eggs.
6.Roll the coated eggplant slices in the breadcrumbs and set aside on a plate.
7.Heat a large skillet over medium-high heat and pour in enough oil to cover the bottom of the pan.
8.Fry the eggplant slices until golden brown, about 2 to 3 minutes on each side.
9.Remove the eggplant slices to drain on paper towels.
10.In a mixing bowl, combine the ricotta cheese, Romano cheese, garlic, salt, and pepper.
11.Spoon about 2 tablespoons of the cheese mixture onto each eggplant slice and roll up tightly.
12.Spread about 1/2 cup of pasta sauce over the bottom of a baking dish.
13.Place the eggplant rolls seam-side down in the baking dish.
14.Spoon the remaining pasta sauce over the top of the eggplant rolls.
15.Sprinkle with any remaining breadcrumbs.
16.Cover the dish with aluminum foil and bake for 20 minutes.
17.Remove the foil and continue to bake for an additional 10 to 15 minutes, until the cheese is melted and the rolls are heated through.
18.Optional: sprinkle with extra grated cheese and broil for 1 to 2 minutes until cheese is bubbly.
