Instructions

1.Preheat the oven to 375°F.
2.Cut off and discard the stem end of the eggplant, and then slice each eggplant in half lengthwise. Using a small knife, cut around the inside of each eggplant to loosen the flesh. Scoop out the flesh with a spoon, leaving a 1/4 inch-thick shell. 3. Sprinkle the inside of the eggplant shells with 1 teaspoon of salt each and set aside for 20 minutes to draw out the moisture.
3.In a skillet over medium heat, heat 1 tablespoon of olive oil. Saute the onions and garlic for 2 to 3 minutes until they are soft.
4.Add the ground lamb and cook for 4 to 5 minutes, stirring occasionally, until browned. Drain excess fat.
5.Fold in the eggplant pulp, parsley, mint, tomatoes, 1 teaspoon of salt, and 1/4 cup of the crumbled feta. Mix gently.
6.Brush the inside of each eggplant shell with remaining olive oil and fill each with the lamb mixture, packing it down.
7.Place the stuffed eggplant halves into a baking dish, cover tightly with foil, and bake in the oven for 45 to 50 minutes.
8.Remove foil, sprinkle with remaining feta, and bake uncovered for another 10 to 15 minutes until cheese has melted and lightly browned.
