3/4 cup roasted peanuts , coarsely chopped
1/4 cup sesame seeds
1 teaspoon coriander powder

1/2 tablespoon tamarind paste
1/2 teaspoon jaggery
1 tablespoon chili powder
1/2 teaspoon turmeric powder
1 tablespoon ginger paste
1 tablespoon garlic paste
1/4 teaspoon asafoetida powder

Instructions

1.Cut off the top of each eggplant and carefully scoop out the inside to create a cavity. Reserve the scooped-out eggplant.
2.In a pan, heat oil and add onions and sauté until translucent. Add garlic, ginger, and the reserved scooped-out eggplant and cook for a couple of minutes.
3.Add the roasted peanuts, sesame seeds, coriander, cumin, garam masala, chili powder, turmeric, tamarind paste, jaggery, asafoetida powder, and salt. Mix well and cook for a few minutes.
4.Preheat the oven and stuff each eggplant with the mixture. Bake for 25-30 minutes, until the eggplants are cooked through.
