Ingredients

1 1/2 lbs small pickling cucumbers ( about 16 )
5 cups filtered water ( do not use chlorinated tap water )
3 tablespoons fine sea salt
3/4 lb daikon radish , peeled
1 inch section fresh gingerroot , peeled
8 green onions
2 tablespoons fresh garlic , minced
1 1/2 teaspoons sugar
2 1/2 teaspoons cayenne pepper ( or Korean hot pepper powder-koch ' u karu )
2 teaspoons fine sea salt ( do not used iodized salt )
Stuffed Cucumber Kimchee, or Oi Sobagi, is a traditional Korean dish that dates back to the 7th century. This unique recipe is made by stuffing cucumbers with a mix of diced radish, ginger, garlic, green onion, and mild red pepper powder, then fermenting it in sealed jars. Instructions

1.Cut off the stem end of each cucumber.
2.Rub the cucumbers all over in the salt water.
3.Cover and refrigerate the cucumbers overnight.
4.Slice the radish into thin strips and soak for 30 min in cold water.
5.Rinse the radish and drain thoroughly.
6.Slice the ginger into thin strips.
7.Cut the green onion into 2-inch pieces.
8.Combine garlic, sugar, cayenne pepper and the 2 tsp sea salt in a small bowl.
9.Mix the radish, ginger, and green onion with the garlic mixture to make a stuffing.
10.Stuff the cucumbers gently with the mixture.
11.Place in a jar and ferment in a cool place for 2-3 days, then in the fridge for more intense flavor.
12.Serve cold.
