Stuffed Chayotes (Chayotes Rellenos) is a classic Mexican dish, and it's easy to see why it's so popular. The dish features tender baked chayote, filled with a savory mixture of ground beef and sofrito sauce. The melted cheese on top provides a delicious contrast to the heat from the adobo seasoning. While the preparation can be time-consuming, the end result is well worth the effort. The chayote is a low-calorie ingredient, so this dish is a healthier alternative to other Mexican meals.

Instructions

1.Preheat your oven to 375°F (190°C).
2.Cut the chayotes in half and remove the seed. Boil them in salted water until they are tender.
3.In a separate pan, brown the ground beef over medium heat. Add the sofrito sauce, tomato sauce, and adobo seasoning. Stir well.
4.Once the chayotes are tender, remove them from the water and place them on a baking sheet.
5.Fill each chayote half with the beef mixture, then top with a slice of cheese.
6.Drizzle olive oil over the top of the cheese.
7.Bake in the oven for about 20 minutes, or until the cheese is melted and bubbly. Serve hot.
