Ingredients

2 cups long-grain rice
1 cup black lentils ( black dal )
1 cup moong lentils ( moong dal )
2 tablespoons ginger , roughly chopped
2 green chilies , roughly chopped
salt
1 cup water ( more as required )
2 tablespoons oil
clarified butter
1/2 lb minced chicken ( lamb can be used )
1 cup finely dices red bell pepper
1 cup finely diced celery
1 cup finely chopped scallion
1 teaspoon garlic , minced
1 teaspoon ginger , minced
2 fresh green chilies , minced
1/2 cup fresh tomato , finely chopped
salt and pepper , to taste
2 tablespoons cooking oil
Stuffed Chatamari is a traditional dish from Nepal that consists of rice crepes filled with a spicy minced meat and vegetable mixture. The crepes are made from a fermented batter of rice and lentils, giving them a sourdough-like flavor and a crispy texture. This dish is commonly eaten for breakfast or as a snack, but can also be enjoyed as a main course. Instructions

1.Wash the lentils (black dal and moong dal) and soak them for at least 3 hours.
2.In a blender, grind the lentils, ginger, green chilies, and salt together. Slowly add water as needed to make a smooth batter.
3.Cover the batter and let it ferment for 5-6 hours.
4.In a pan, heat 1 tablespoon of oil and add minced chicken (or lamb). Cook for 5-7 minutes on medium heat.
5.In another pan, heat 1 tablespoon of oil and add garlic, ginger, green chilies, and tomatoes. Cook for 3-4 minutes on medium heat.
6.Add the cooked meat to the pan and stir in red bell pepper, celery, scallion, salt, and pepper. Cook for an additional 2-3 minutes.
7.Heat a non-stick pan over medium heat and brush with clarified butter.
8.Pour a ladleful of batter into the pan and spread it in a circular motion to form a crepe.
9.Spoon the filling onto the crepe and gently press it down.
10.Cook for 2-3 minutes until the crepe is crisp and golden brown.
11.Serve immediately and enjoy!
