Ingredients

12 tomatillos , husked and rinsed
1 small onion , quartered and peeled
6 medium garlic cloves , peeled
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon chipotle hot sauce
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice
1/2 teaspoon sea salt
6 large poblano peppers
4 ounces smooth mild goat cheese ( I used cream cheese at room temp . )
3/4 cup shredded monterey jack cheese ( may need a bit more )
12 ounces cooked crabmeat , picked through for shells and cartilage

Instructions

1.Preheat oven to 400°F.

5.Place the hot peppers in a plastic bag and seal. Let them cool.
6.When cool, gently peel off the skin, leaving the stem attached.
7.Slice each pepper down one side.
8.Remove the seeds and the membranes.
9.In a large mixing bowl, combine goat cheese, Monterey Jack cheese, and crab meat.
10.Stuff each pepper with the cheese and crab meat mixture.
11.Place the stuffed peppers in a baking dish and pour the tomatillo sauce over the top.
12.Bake for 20 minutes, or until bubbly and hot.
