Ingredients

4 pheasant breast ( if pheasant is not available chicken may be substituted )
1 tablespoon butter
3/4 cup brie cheese , diced
1 tablespoon shallot , minced and sauteed until translucent
1 teaspoon garlic , minced and sauteed until translucent
2 tablespoons tomatoes , concasse ( peeled , seeded and diced )
2 tablespoons green onions , chopped
2 tablespoons cremini mushrooms , finely chopped
1 teaspoon sage , finely chopped
4 slices bacon
salt and pepper
4 sheets puff pastry , 5 x 5 inches
1 egg , beaten

Instructions

1.Preheat oven to 180C/350F.
2.Pound the pheasant breasts with a kitchen hammer, then season them with salt and pepper.

4.Add chopped mushrooms and cook until they are soft, then add diced tomatoes, chopped green onions, and diced brie cheese. Mix everything together and let it cool down.

6.Roll out puff pastry sheets and cut them into squares 5 x 5 inches. Brush the edges with beaten egg and put stuffed breasts in the center.

8.Bake for 30-35 minutes or until pastry is golden brown.
