2 shallots
1 teaspoon chopped fresh garlic
1 cup red wine
10 ounces beef stock
roux , to thicken
6 tenderloin , filets
4 medium poblano chiles , roasted and cleaned
6 ounces shredded monterey jack cheese
2 chipotle chiles ( smoked jalape�os )

Instructions

1.Preheat oven to 400F.
2.Sauté shallots and garlic in a saucepan.
3.Add red wine and beef stock to the pan and bring to a boil. Simmer for 10 minutes, and thicken with roux. Add salt and pepper to taste.
4.Cut a slit lengthwise in each tenderloin filet, being careful not to cut through the other side.
5.Stuff 1/4 of a poblano pepper and 1 oz. of cheese into each slit.
6.Heat a skillet over high heat.
7.Sear each steak for 2 minutes on each side.
8.Transfer the steaks to a baking sheet and top with remaining cheese.
9.Brush with oil and bake in the oven for 8-10 minutes, or until fully cooked.
10.Serve topped with chipotle demi-glace.
