Ingredients

1 2/3 cups self raising flour
2/3 cup skim milk
1/3 cup raw sugar
2 medium eggs
1/3 cup canola oil
3 drops strawberry essence
red food coloring
50 g white chocolate
2 tablespoons skim milk
Strawberry & White Chocolate Mini Cupcakes are a perfect recipe for your tea-time snack. These small cupcakes are a delicious sweet treat and are absolutely irresistible! Instructions

1.Preheat the oven to 180C/350F/Gas Mark 4.
2.Line mini muffin cups with paper cupcake liners.
3.Sift the self-raising flour into a large bowl and add raw sugar.
4.Whisk eggs in separate bowl and add skim milk, canola oil, strawberry essence and red food coloring. Whisk together until fully combined.
5.Gradually add egg mixture to flour mixture. Stir in until just combined.
6.Fold in chopped white chocolate.
7.Fill the liners ¾ full with the mixture.
8.Bake mini cupcakes at 180C/350F/Gas Mark 4 for 12-15 minutes or until an inserted toothpick comes out clean.
9.Remove from the oven and let them cool. Cover with sprinkles, frosting or fresh strawberries if you like!
