2 cups all-purpose flour

1 cup unsalted butter , softened
1 cup sugar
2 large egg yolks
1/2 teaspoon pure vanilla extract
3/4 cup seedless raspberry preserves or 3/4 cup raspberry jam
confectioners ' sugar , for dusting ( optional )

Instructions

1.Preheat oven to 350°F (175°C).
2.In a medium-sized bowl, whisk together flour, baking powder and salt.
3.In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla.
4.Gradually add in flour mixture, until fully combined.
5.Place dough in the refrigerator for 30 minutes.
6.Press two-thirds of the dough into a greased 9×13 inch baking pan.
7.Spread raspberry preserves or raspberry jam on top of the dough.
8.Crumble remaining shortbread dough on top of preserves.
9.Bake until golden brown, approximately 35-40 minutes.
10.Remove from the oven and let cool completely before slicing into squares. Dust with confectioners' sugar, if desired.
