Instructions

1.Preheat oven to 325°F (163°C).
2.In a large bowl, cream butter and sugar together until light and fluffy, about 5-6 minutes.
3.Add in eggs, one at a time, mixing well after each addition.
4.Stir in 2 tablespoons of lemon juice and lemon zest.
5.In a medium bowl, whisk together 2 cups of flour, baking soda and salt.
6.Add half of the flour mixture to the batter and mix until just combined.
7.Add in Greek yogurt, mix well and then add the remaining flour mixture.
8.In a small bowl, toss diced strawberries with remaining tablespoon of lemon juice and coat with remaining 1/2 cup of flour.
9.Fold in diced strawberries gently to the batter.
10.Pour batter into greased and floured 10-inch bundt pan. Bake for 60-75 minutes or until a toothpick inserted in the center comes out clean.
11.Allow cake to cool for 10 minutes before removing it from the pan.
12.Dust with powdered sugar.
