Ingredients

1200 g strawberries ( weight after hulling )
400 g super gelling sugar ( Dr. Oetker 's 1-3 )
3 1/2 tablespoons fresh basil , coarsely chopped
2 1/2 tablespoons lime juice
2 1/2 teaspoons lime peel , finely grated

Instructions

1.Rinse strawberries in cold water and remove the stems.
2.Chop your strawberries in half and then in fourths.
3.Mix the strawberries and gelling sugar in a large pan until the sugar is well-distributed.
4.Bring to a boil for 2-3 minutes, stirring constantly to avoid sticking and burning.
5.Remove from heat and add the finely grated lime peel and lime juice. Add the chopped basil and stir well.
6.Transfer to sterilized jars and let cool for at least 12 hours.
