Ingredients

2 eggs
1/4 cup milk
2 tablespoons water

6 tablespoons cottage cheese
1/4 cup sugar
2 cups fresh strawberries ( or frozen unsweetened & thawed )
1 tablespoon lemon juice
1/3 cup sugar

Instructions

1.In a blender, combine eggs, milk, water, flour, and salt. Blend until smooth.
2.Heat a lightly greased 6-in. skillet; pour 2 tablespoons batter into center of skillet. Lift and tilt pan to spread batter.
3.Cook until set; turn and cook until lightly browned. Remove to wire rack to cool.
4.In a small mixing bowl, beat cream cheese, cottage cheese and sugar until smooth.
5.On each crepe, spread about 3 tablespoons of cheese mixture; top with about 1/4 cup strawberries. Roll up and place on a greased baking sheet.
6.Bake at 425° for 12-15 minutes or until edges are golden brown.
7.In a saucepan, combine sauce ingredients. Cook and stir over medium heat until mixture comes to a boil.
8.Serve with sauce.
