Ingredients

1 whole chicken
3 quarts water
11 carrots
6 stalks celery
2 onions
1/2 cup uncooked white rice
6 ounces baby spinach , chopped
1/2 cup grated Romano cheese
2 teaspoons salt
1 teaspoon ground black pepper
1/2 teaspoon dried oregano
1 tablespoon lemon juice
3 cans chicken broth
4 eggs , lightly beaten
Stracciatella is a classic Italian soup, made by whisking eggs into a hot chicken broth to create thin ribbons or strands of cooked egg throughout the soup. Instructions

1.Place the chicken and water in a large stockpot and bring to a boil over high heat.
2.Reduce heat to low, and let simmer for 1 - 2 hours, skimming off any foam that rises to the surface.
3.Remove the chicken from the broth and set aside until cool enough to handle, then remove the meat from the bones and cut it into bite-sized pieces.
4.Return the chicken bones to the pot and simmer for another 2 - 3 hours.
5.Meanwhile, chop the carrots, celery and onions into small pieces.
6.When the bones have simmered sufficiently, strain the broth and return it to the stockpot.
7.Add the carrots, celery, onions, rice, spinach, salt, black pepper, and oregano to the broth and simmer for 30 minutes, or until the vegetables are tender.
8.Stir in the lemon juice.
9.Beat the eggs in a small bowl, then slowly pour them into the pot while stirring the soup with a fork. The eggs should form thin strands as they cook immediately upon hitting the hot broth.
10.Add the cooked chicken to the pot, stir in the chicken broth, and heat through until piping hot.
