Stovies is a traditional Scottish dish made from leftover roast beef, potatoes, and vegetables, and flavored with gravy. It is a hearty and comforting meal that is perfect for cold winter evenings. The name 'stovies' is thought to come from the French word 'étouffée,' which means 'smothered,' as the ingredients are cooked together in a pot and left to simmer until tender and delicious. While you can use any leftover roast meat for this recipe, stovies made with beef is the most popular version in Scotland, where it originated.
