water ( to cut down on olive oil intake )
1 teaspoon oregano
3 tablespoons minced garlic cloves

Instructions

1.Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom of the pan.
2.Add the eggplant and cook for 5-7 minutes, stirring occasionally, until tender.
3.Add the sliced mushrooms, diced tomatoes, oregano and minced garlic cloves to the skillet. Stir to combine.
4.Reduce heat to medium, cover the skillet, and simmer for 5 minutes.
5.Add water to help cook the eggplant and cut down on olive oil intake (about 1/4 cup).
6.Uncover and let the mixture simmer for 5 more minutes, or until most of the liquid has cooked off.
7.Add seasoning salt to taste and sprinkle with bread crumbs. Serve as is or sprinkle Parmesan cheese on top for a Parmesan version.
