Instructions

1.In the bowl of a stand mixer, combine 1 cup of flour, lukewarm water, and instant yeast. Mix until well combined.
2.Add in the dried pineapple, dried cranberries, candied cherries, and rum. Mix until incorporated.
3.Add the 2 1/2 cups of flour, softened butter, sugar, nonfat dry milk powder, salt, almond extract, vanilla extract, and orange zest. Mix on low speed until the ingredients are combined.
4.Mix on medium speed for 5 minutes, until the dough is smooth and elastic.
5.Add in the chopped toasted almonds and mix until just combined.
6.Form the dough into small balls, and place on a greased baking sheet. Cover with plastic wrap and let rise for 1 hour.
7.Preheat the oven to 350°F.
8.Bake the Stollen Bites for 15-18 minutes, until golden brown. Let cool for 10 minutes.
9.In a small saucepan, melt the butter over low heat. Add in the confectioners' sugar, and stir until smooth.
10.Dip the tops of the Stollen Bites into the glaze, and let set before serving.
