Ingredients

2 lbs beef bones with marrow ( if you also have some veal bones , add them too )
1/2 lb stew meat ( optional )
olive oil
1 medium onion , peeled and quartered
1 large carrot , cut into 2 inch segments
celery tops ( handful ) or 1 large celery rib , cut into 1 inch segments
1 garlic clove , unpeeled and crushed with the side of a knife
fresh parsley , stems and leaves ( small handful )
1 bay leaf
6 peppercorns
Stock is a classic culinary foundation for many dishes. This recipe uses roasted beef marrow bones to enhance the flavor and nutrient content of the stock. The bones and meat are roasted first, which brings out a rich aroma and deep flavor. Then they are simmered for several hours to extract all the goodness into the stock. Instructions

1.Preheat oven to 450°F.
2.Toss beef bones and stew meat with olive oil and spread in a single layer on a baking sheet.
3.Roast in the oven until browned, for about 30 minutes.
4.Transfer the roasted bones and meat to a large stockpot.
5.Add onion, carrot, celery, garlic, parsley, bay leaf, and peppercorns.
6.Fill the pot with enough cold water to cover all the ingredients by about 5cm.
7.Bring to a boil over high heat, then reduce heat to low and simmer gently for at least 12 hours, up to 48 hours.

CONS
