Ingredients

8 ounces rice stick noodles ( about 1/4-inch thick )
1/4 cup water
3 tablespoons vegetable oil
3 tablespoons fish sauce
1 tablespoon lime juice
1 tablespoon sugar
1 onion , thnly sliced
1 red bell pepper , seeded and thinly sliced
12 ounces extra-large shrimp , peeled and deveined
4 garlic cloves , minced
1 tablespoon curry powder
6 scallions , cut into 1-inch lengths
lime wedge ( optional )
This yummy and colorful dish is inspired by Thai and Indian cuisine and features juicy curried shrimp and stir-fried veggies on a bed of tender rice noodles. The dish is quick and easy to prepare and is perfect for a weeknight dinner or lunch, or for entertaining guests. The dish has a complex and flavorful taste and aroma that comes from the blend of shrimp, curry powder, fish sauce, lime juice, and sugar and the crisp veggies. Instructions

1.In a small bowl, whisk together water, fish sauce, lime juice, and sugar and set aside.
2.Soak rice noodles in warm water for 20 minutes then drain them.
3.Heat a large non stick pan over high heat until hot, then add 1 tablespoon oil and swirl to coat.
4.Add onion and bell pepper and cook for 3 minutes or until lightly browned but still crunchy.
5.Add shrimp and cook for around 1.5 to 2 minutes or until they start turning pink.
6.Add garlic and curry powder and fry for around 20 seconds or until fragrant.
7.Add noodles and sauce mixture. Toss everything together until noodles are soft tender and coated with the sauce.
8.Add in the remaining oil and scallions and toss together for just a few seconds until combined. Serve hot with lime wedges if you like.
