2 tablespoons vegetable oil
1 tablespoon minced garlic
8 ounces extra firm tofu , drained thoroughly and sliced into 1/2 inch cubes ( to yield 1 1/2 cups )
1 1/2 cups bean sprouts
2 scallions , trimmed and sliced diagonally into 1-inch lengths
1 large egg
2 tablespoons crushed unsalted peanuts
3 tablespoons chopped fresh cilantro
1 lime , cut into wedges for serving

Instructions

1.Cook noodles according to package instructions until al dente; drain and set aside.

3.Heat oil in a large pan or wok over medium-high heat. Add garlic; cook for 1 minute, stirring frequently.

6.Push vegetables and tofu to one side of pan; add egg to empty side.
