Ingredients

1 lb Red Bliss potatoes , quartered
cracked black pepper
salt
1 tablespoon dried thyme
2 tablespoons olive oil
3 ounces bacon , chopped
1 cup veal stock
2 tablespoons chopped shallots
1 teaspoon chopped garlic
1/2 cup walnut pieces
4 filet mignon
1 cup crumbled Stilton cheese
4 fluid ounces port wine
vegetable oil ( for frying )
4 whole shallots , cut into � inch rings
1/4 cup flour
1 tablespoon chopped parsley

Instructions

1.Preheat the oven to 400 F.
2.On the stovetop, cook the potatoes in boiling salted water until tender for about 20 minutes.
3.Drain the potatoes and toss them with 1 tablespoon of olive oil, dried thyme, and black pepper to taste. Set aside.
4.Fry the bacon in a large skillet until it is crisp, then transfer it to a plate.
5.In the same skillet, add the shallots and garlic and cook until the shallots are browned.
6.Add the walnut pieces, bacon, and veal stock, and stir well.
7.Boil the mixture for about 5 minutes until the liquid is reduced by half.
8.Cut a pocket in the side of each filet mignon and stuff it with crumbled Stilton cheese.
9.Heat the vegetable oil in a skillet over high heat and sear the filets for 2 minutes on each side.
10.Place the filets on a baking sheet and roast in the oven for 8-10 minutes.
11.In the same skillet, add the port wine and bring it to a simmer.
12.Add the fried shallot rings and cook for about 2 minutes until the liquid is reduced by half.
13.Add the flour and cook for another 2-3 minutes until the sauce thickens.
14.Spoon the sauce over the filets and garnish with chopped parsley.
