Ingredients

1 kg chicken wings , trim off tip and cut through each wing at the joint
10 shallots , peeled and pounded to a fine paste in a pestle and mortar
2 tablespoons black peppercorns , finely crushed
4 tablespoons dark soya sauce ( not the sweet variety )
1 tablespoon light soya sauce
4 teaspoons sugar
320 ml Guinness stout

Instructions

1.Preheat the oven to 180C.
2.Mix the shallot paste and Guinness stout in a bowl.
3.Add in the dark soya sauce, light soya sauce, sugar and black peppercorns and stir until the sugar dissolved completely.
4.Spread the chicken wings out on a baking tray lined with parchment paper and pour the marinade over the top.
5.Rub the marinade all over the chicken wings to make sure they are coated evenly.
6.Bake the chicken wings in the oven for 30-35 mins or until cooked through, turning regularly and basting the marinade onto the wings each time.
7.Once the wings are cooked through, turn up the oven temperature to 220C and grill them for another 5-10 minutes to crisp up the wings.
