Ingredients

240 g seeded chopped dates
1/2 cup water
1/4 teaspoon baking soda
1 egg , lightly beaten
3/4 cup brown sugar
2 cups self raising flour
1/4 cup vegetable oil
1 cup milk
1 1/2 cups brown sugar
300 ml cream

Instructions

1.Preheat oven to 180C. Line muffin pan with paper cases.
2.Combine dates, water and baking soda in a medium saucepan. Cook over medium heat, stirring until the mixture boils. Reduce heat and simmer for 2 minutes or until the mixture thickens. Remove from heat and cool for 10 minutes.
3.Stir in egg, brown sugar, flour, vegetable oil, and milk until just combined. Do not over mix.
4.Spoon the mixture evenly into muffin cases.
5.Bake for 20-25 minutes or until a skewer inserted into the centre of the muffins comes out clean.
6.Heat brown sugar and cream in another medium saucepan over low heat, stirring for 3 minutes or until the sugar dissolves.
7.Increase heat and bring to the boil. Reduce heat and simmer, occasionally stirring, for 5 minutes. Let toffee sauce cool and spoon over warm muffins.
