Ingredients

1 lb pork , thinly sliced ( I usually use boneless pork loin chops , but do not trim the fat )
2 tablespoons korean red pepper paste ( kochujang )
3 cups water
1 cup kim chee
1 teaspoon soy sauce
1 tablespoon korean red pepper powder ( kochugaru )
2 tablespoons garlic , minced
2 green onions , sliced on the bias
1/2 lb tofu ( medium or firm )
2 hot green chili peppers , chopped ( optional )
salt , to taste
pepper , to taste
Stewed Kimchi (Kimchi Jji Ge) is a traditional Korean stew made from Kimchi, a fermented vegetable dish, often paired with rice and other Korean side dishes. It is a popular comfort food in Korean cuisine and is often enjoyed during the colder months. Instructions

1.In a large pot, heat some oil over medium-high heat. Add sliced pork and cook until it turns brown.
2.Next, add the Korean red pepper paste, soy sauce, garlic, and green onions into the pot and stir until well combined.
3.Pour in the water followed by kimchi, Korean red pepper powder, and chopped hot green chili peppers (if using) in the pot. Season with salt and pepper.
4.Bring the mixture to boil, lower the heat, and simmer for at least 30 minutes. Add in the tofu after 15 minutes of simmering and let it cook for remaining 15 minutes.
