Ingredients

3 1/4 lbs boneless beef chuck roast , trimmed ( about 2 inches thick )
1/2 cup matchstick-size strips pancetta or 1/2 cup bacon
1 bottle dry red wine
2 tablespoons olive oil
1 large onion , chopped
2 carrots , peeled , cut into 1/2-inch-thick rounds
2 celery ribs , cut into 1/2-inch-thick pieces
2 bay leaves
1 tablespoon whole juniper berries
1/2 ounce dried porcini mushrooms , rinsed to remove grit
1 teaspoon whole black peppercorn
2 whole cloves
8 cups water
2 teaspoons salt
2 cups polenta ( coarse cornmeal )

Instructions

1.Preheat the oven to 350°F (175°C).
2.Cut the beef into 2-inch cubes and set aside.
3.Cook the pancetta or bacon in a Dutch oven over medium heat until crisp, then remove and drain on paper towels. Keep the drippings in the pot.
4.Add the beef to the pot and cook until browned on all sides. Remove the beef with a slotted spoon.
5.Add the onion, carrots, and celery to the pot and cook until softened. Add the bay leaves, juniper berries, mushrooms, peppercorns, and cloves and cook for another minute.
6.Add the beef back to the pot and pour in the wine and water. Add the pancetta or bacon and 1 teaspoon of salt.
7.Bring the liquid to a boil, then cover the pot and cook in the oven for 2 1/2 to 3 hours, or until the beef is tender and easily pierced with a fork.
8.While the beef is cooking, prepare the polenta. Bring 8 cups of water to a boil in a large pot.
9.Slowly whisk in the polenta and 2 teaspoons of salt. Cook for about 30 minutes, stirring often, until the polenta is thick and creamy.
10.Serve the beef with the creamy polenta on the side.
