1 tablespoon butter

1/2 cup sour cream
1 1/2 cups cubed cooked chicken breasts
1 cup shredded cheddar cheese , divided
6 flour tortillas
1/4 cup milk
Steph's Chicken Enchiladas are a comfort food classic that are perfect for a cozy weeknight dinner or a family gathering. This recipe features a creamy sauce made with chicken, green onion, diced green chilies, and cheese wrapped in flour tortillas that are baked to perfection and topped with even more cheese. Not only is this recipe delicious, but it is also easy to make and can be prepared in advance to save time.

Instructions

1.Preheat oven to 350ºF (177ºC).
2.Melt butter in a skillet over medium-high heat, add garlic powder and green onion and sauté for a couple of minutes.
3.Add diced green chilis, condensed cream of mushroom soup, and sour cream, stir together.
4.Add cubed chicken and half of shredded cheese, and stir to combine.
5.Warm tortillas in the microwave or oven. Spoon some of the mixture into each flour tortilla, and place into a lightly greased 9x13 inch baking dish.
6.Combine milk and remaining shredded cheese in a bowl and pour over the enchiladas.
7.Bake for 30 minutes and then broil for an additional 2-3 minutes to brown the cheese.
