200 g star pasta ( stelline )
340 g asparagus
3 small potatoes
3 sprigs of fresh mint
1 liter vegetable stock or 1 liter chicken stock
1 tablespoon unsalted butter
1/2 onion , minced
salt and pepper

Instructions

1.Rinse and trim the asparagus spears. Cut the spears into 1-inch pieces.

6.Add the star pasta to the soup and cook for 5-6 minutes or until the pasta is tender.
7.Remove the pot from heat, stir in the fresh mint and let it steep for a few minutes.
8.Use an immersion blender or transfer soup to a blender in batches to puree the soup until smooth.
9.Season with salt and pepper as needed and serve hot.
