Ingredients

1/2 lb ground pork
1/2 lb shrimp , shelled and deveined
2 garlic cloves
1 green chili pepper , finely chopped , seeded and membrane removed ( jalapeno )
2 shallots , finely chopped
1/4 cup water chestnut , finely chopped
1 tablespoon fresh ginger , grated
1 tablespoon low sodium soy sauce , plus some for dipping
1 teaspoon cornstarch
1 small egg , beaten
1 teaspoon sesame oil
1/2 lemon , juiced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 package wonton wrappers
1 head savoy cabbage , for lining the steamer ( optional )

Instructions

1.In a food processor, combine the ground pork, shrimp, garlic, chili pepper, shallots, water chestnut, ginger, soy sauce, cornstarch, egg, sesame oil, lemon juice, salt, and black pepper.
2.Pulse until the mixture is well combined.
3.Lightly flour a work surface and lay out a wonton wrapper. Spoon about 1 tablespoon of the filling onto the wrapper, then gather the wrapper up around the filling and twist it to seal. Repeat with the remaining filling and wrappers.
4.Line the bottom of a steamer basket with savoy cabbage leaves. Arrange the wonton bundles on top of the cabbage leaves, ensuring they are not touching each other.
5.Place the steamer basket over a pot of boiling water. Cover and steam the wonton bundles for about 8-10 minutes or until the filling is cooked through.
