2 small approx 300g eggplants
oil ( for deep frying )
2 tablespoons red miso
2 tablespoons yellow miso
2 tablespoons mirin
3 tablespoons sake
2 teaspoons sesame seeds
2 teaspoons caster sugar
Steamed Eggplant with Miso Sauce (Nasu Dengaku) is a traditional Japanese dish that is often served as a side dish or appetizer. Instructions

1.Make criss-cross cuts on the eggplant's surface and cut them into 1 1/2 inch thick pieces. Fry them in 350 F oil for 5-6 minutes until they become golden brown.
2.In a separate pot, mix red miso, yellow miso, mirin, sake, sesame seeds, and caster sugar together. Heat the mixture on low heat until it forms a smooth and thick sauce.
3.Place the fried eggplant pieces on a steaming rack and steam them on medium heat for 5 minutes.
4.Pour the miso sauce over the eggplants just before serving and sprinkle with some sesame seeds.
