Ingredients

175 g fresh cranberries ( or frozen , thawed )
1 tablespoon icing sugar
2 tablespoons cranberry sauce or 2 tablespoons jelly
300 g self-raising flour , plus extra for dusting
140 g dried suet
85 g caster sugar
finely grated zest 1 orange
175 -200 ml milk
custard , to serve

Instructions

1.Put the cranberries, icing sugar, and cranberry sauce into a small pan with a splash of water.
2.Bring to a boil over medium heat and cook for 3-4 minutes, or until the cranberries soften and burst.
3.Set aside to cool.
4.Meanwhile, in a large bowl, mix together the self-raising flour, suet, caster sugar, and orange zest.
5.Gradually add in the milk, stirring continuously until a soft dough forms.
6.Dust a clean work surface with some extra flour and roll out the dough into a rectangle shape.
7.Spread the cranberry mixture evenly over the dough, leaving a small border around the edges.
8.Tightly roll up the dough, making sure the filling is enclosed inside.
9.Place the roll onto a large piece of greaseproof paper and wrap it tightly, twisting the ends to seal it.
10.Place the roll into a steamer, and steam for 1 hour until the dough is cooked through.
11.Serve hot with custard.
