Ingredients

1 roasting chickens
1 tablespoon kosher salt
1 pinch sugar
1/2 teaspoon salt
2 teaspoons light soy sauce
2 tablespoons gingerroot , peeled & finely chopped
2 garlic cloves , chopped
4 tablespoons scallions , finely chopped
2 tablespoons peanut oil
1 teaspoon sesame oil
Steamed Chicken (Zheng Ji) is a classic Chinese dish that is simple to prepare and packed with flavor. The chicken is seasoned with ginger and soy sauce, then steamed until tender and moist. The dipping sauce made with fresh ginger, garlic, and scallions adds a spicy kick and brings out the natural flavors of the chicken. Instructions

1.Clean the chicken and pat dry with a paper towel. Mix the kosher salt and sugar together and rub the mixture evenly over the skin of the chicken.
2.Place the chicken into a heatproof dish that can fit into a steamer. In a small bowl, mix together the soy sauce, salt, and 1 tablespoon of ginger. Pour the mixture over the chicken, making sure it is evenly distributed inside and outside of the chicken.
3.Place the dish into the steamer and steam over high heat for about 30 minutes. Check for doneness by making sure the juices run clear when you cut into the chicken. If it is not cooked through, continue to steam for another 5-10 minutes.
4.While the chicken is steaming, mix together the remaining ginger, garlic, scallions, peanut oil, and sesame oil in a small bowl. Set aside.
5.When the chicken is done, remove it from the steamer and let it rest for 5-10 minutes. Serve it with the dipping sauce on the side.
