Ingredients

4 aberdeen angus rib eye steaks
1 ounce butter
1 shallot , chopped
4 tablespoons Scotch whisky
1 teaspoon coarse grain mustard ( I use 1 tablespoon )
1/2 cup beef stock
4 ounces sliced mushrooms
1 cup double cream
1/4 - 1/2 cup fresh parsley , chopped
salt , to taste
fresh ground black pepper , to taste
Steak Balmoral is a Scottish dish that originated from Queen Victoria's visit to Scotland. It is named after Balmoral Castle, one of the residences of the British Royal Family. The dish is made with tender rib eye steaks, creamy whiskey mushroom sauce and chopped parsley. It is usually served with mashed potatoes, vegetables or a crusty bread to mop up the sauce. Instructions

1.Season the rib eye steaks with salt and black pepper.
2.Heat a large skillet over high heat and add butter.
3.Once butter has melted, add the steaks and cook for 3-4 minutes on each side for medium-rare. Adjust cooking time based on desired doneness.
4.Remove steaks from skillet and set aside.
5.In the same skillet, sauté shallots until translucent.
6.Add sliced mushrooms and cook until they release their moisture.
7.Pour scotch whisky into the skillet and stir until the alcohol has evaporated.
8.Add beef stock and mustard, and let it simmer until the liquid is reduced by half.
9.Add double cream and return the steaks to the skillet. Cook for another 2-3 minutes on medium heat.
10.Garnish with chopped parsley and serve hot.
